Easy Air Fryer Chicken Quesadilla

This easy air fryer quesadilla makes a quick dinner, lunch, or after-school snack. Cooked shredded chicken keeps the filling simple, salsa adds flavor, and Monterey Jack melts into every bite.

  • Shredded chicken: Use cooked shredded or diced chicken. Store-bought chicken works, or make your own shredded chicken.
  • Salsa: Salsa seasons the chicken. Choose mild, medium, or hot based on the flavor you want.
  • Shredded cheese: Monterey Jack melts beautifully, but a Mexican blend, cheddar, or pepper Jack also works.

How to Make a Chicken Quesadilla in the Air Fryer

Mix the cooked chicken and salsa. Divide the filling and cheese between the tortillas, fold each tortilla over, and secure the edges with four toothpicks so the top does not lift in the circulating air.

Air fry at 400ºF for 6 minutes, flipping halfway through. The tortilla should look golden and crisp and the cheese should be melted. Air-fryer models and basket sizes vary, so cook in batches if the quesadillas do not fit in a single layer.

Variation Ideas

  • Cheese: Skip the chicken and make a cheese quesadilla. The existing recipe notes suggest increasing the cheese by about 1/2 cup.
  • Shredded pork: Use shredded pork or carnitas in place of chicken.
  • Beef: Try shredded beef or ground beef taco meat.
  • Refried beans: The recipe notes recommend refried beans rather than whole beans, which can fall out of the tortilla.

How do I keep a tortilla from lifting in the air fryer?

Secure the folded edge with four toothpicks before cooking. Remove every toothpick before slicing and serving.

Can I use corn tortillas?

Flour tortillas are recommended for this recipe. Corn tortillas fell apart during testing.

When should I flip the quesadilla?

Flip halfway through the 6-minute cook time. It is ready when the tortilla is golden and crisp and the cheese has melted.

Can I use a different cooked filling?

Yes. The existing recipe offers shredded pork, beef, cheese, or refried beans as filling ideas. Keep loose fillings contained so they do not fall out.

Storage

Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.

Ingredients 

  • 4 oz. shredded chicken, ~1 cup
  • ¼ cup salsa, or sauce of choice
  • 2 8-inch flour tortillas
  • 4 oz. shredded monterey jack, ~1 cup

  • Salsa
  • Sour cream
  • Guacamole

Instructions 

  • Preheat the air fryer to 400ºF and spray the air fryer basket with nonstick cooking spray.
  • In a bowl, combine the shredded chicken and salsa.

  • Lay the tortillas on a flat surface. Spread ½ cup of the chicken mixture on one side of each tortilla, then add ½ cup of shredded cheese to each. Fold the tortillas over and secure each folded edge with 4 toothpicks.

  • Place the quesadillas in the air fryer in a single layer, working in batches if needed, and lightly spray with nonstick cooking spray. Air fry at 400ºF for 6 minutes, flipping halfway through. The tortillas should be golden and crisp and the cheese should be melted.
