Air Fryer Chicken Quesadilla
This crispy air fryer chicken quesadilla combines shredded chicken, salsa, Monterey Jack, and flour tortillas. It is ready in about 20 minutes.

- 4 oz. shredded chicken ~1 cup
- ¼ cup salsa or sauce of choice
- 2 8-inch flour tortillas
- 4 oz. shredded monterey jack ~1 cup
Preheat the air fryer to 400ºF and spray the air fryer basket with nonstick cooking spray.
In a bowl, combine the shredded chicken and salsa.
Lay the tortillas on a flat surface. Spread ½ cup of the chicken mixture on one side of each tortilla, then add ½ cup of shredded cheese to each. Fold the tortillas over and secure each folded edge with 4 toothpicks.
Place the quesadillas in the air fryer in a single layer, working in batches if needed, and lightly spray with nonstick cooking spray. Air fry at 400ºF for 6 minutes, flipping halfway through. The tortillas should be golden and crisp and the cheese should be melted.
Remove all toothpicks, then slice and serve immediately.
- Use two 8-inch flour tortillas. Corn tortillas fell apart during testing.
- Any melty cheese works; Monterey Jack is our favorite.
- Hamburger or refried black beans are filling ideas. Refried beans stay inside the tortilla better than whole beans.
- Air-fryer models and basket sizes vary; cook in batches if the quesadillas do not fit in a single layer.
