Make grilled cheese for a group without standing at the stove: this sheet pan grilled cheese method lets you bake four sandwiches at once in the oven. I assemble the sandwiches with butter on the outside, a thin layer of mayo on the inside, and plenty of melty cheese, then bake, flip, and serve them right away.
A 13 × 18-inch half sheet pan comfortably holds four fully assembled sandwiches in a single layer. The result is golden, crisp bread on both sides with cheese that is fully melted—just what I want when grilled cheese is on the menu.

Why You’ll Love Sheet Pan Grilled Cheese
- Easy For A Group: Bake four sandwiches together instead of cooking them one at a time on the stovetop.
- Simple Method: Assemble the sandwiches, bake for 5 minutes, flip, and bake for 2–3 minutes more.
- Flexible Ingredients: Sourdough, thick-cut white bread, Texas toast, and any sliced cheese with good meltability work here.
- Best Served Right Away: The sandwiches are at their crispiest and meltiest straight from the oven.
What You Need
You need just a few ingredients for sheet pan grilled cheese:
- Bread: Use sourdough, thick-cut white bread, or Texas toast. Choose slices sturdy enough to hold the filling.
- Sliced Cheese: Use any sliced cheese with good meltability. Cheddar and American cheese are easy choices, and standard sandwich slices or thicker deli-cut slices both work.
- Softened Butter: Spread it on the outside of the bread so the sandwiches bake up golden and crisp.
- Mayonnaise: Spread a thin layer on the inside of the bread, if you like it. Mayo in grilled cheese can be controversial, but we’re big fans—feel free to skip it if it’s not your thing.

Best Bread And Cheese Choices
Sourdough and thick-cut white bread or Texas toast were tested for this recipe. Both give the sandwiches enough structure for the oven method. Avoid crowding the pan so the bread has room to brown.
For cheese, choose sliced options that melt well. Cheddar and American cheese are classics, but they are not the only options. We especially like Tillamook’s medium-cut orange cheddar. Standard sandwich slices and thicker deli-cut slices both work. If thicker cheese is not fully melted after the stated bake time, continue baking for 1–2 minutes.

How The Sheet Pan Method Works
This method uses one ungreased 13 × 18-inch half sheet pan. Assemble each sandwich completely before it goes in the oven, then arrange the closed sandwiches in one uncrowded layer. Bake at 400°F in a conventional oven for 5 minutes, flip each sandwich, and bake for another 2–3 minutes.
The buttered bread goes directly onto the ungreased pan—no cooking spray is needed. The sandwiches are ready when the bread is golden and crisp on both sides and the cheese is fully melted.
How To Make Sheet Pan Grilled Cheese
Preheat The Oven
Heat a conventional oven to 400°F. Set out a 13 × 18-inch half sheet pan; do not grease it.
Assemble The Sandwiches
For each sandwich, spread 1 teaspoon softened butter across the outside of the two bread slices (½ teaspoon per slice). If using mayonnaise, spread ½ teaspoon total on the inside of the bread slices (¼ teaspoon per slice).
Place two slices of cheese between the bread, with the mayo sides facing the cheese. Close the sandwiches and arrange all four on the sheet pan in a single, uncrowded layer.
Bake And Flip
Bake for 5 minutes. Flip each sandwich, then bake for 2–3 minutes more, until the bread is golden and crisp on both sides and the cheese is fully melted. If you use thicker cheese and it needs more time to melt, bake for 1–2 minutes longer.
Serve Immediately
Slice the sandwiches, if desired, and serve immediately for the best crisp bread and melted-cheese texture.

Stovetop Grilled Cheese

How To Serve A Crowd
One 13 × 18-inch half sheet pan comfortably fits four closed sandwiches without crowding. For more people, use a sufficiently large pan and keep every sandwich in a single, uncrowded layer. Serve each batch as soon as it is ready for the best crispness and melted cheese.
Scaling The Recipe
You can double or triple this recipe for a crowd when you have enough pan space to keep the sandwiches in a single, uncrowded layer. The same bake-and-flip timing applies. If the sandwiches will not fit without crowding, bake them in batches rather than stacking or squeezing them together.
Troubleshooting Sheet Pan Grilled Cheese
The Cheese Is Not Fully Melted
Thicker cheese can need a little extra time. Bake the sandwiches for 1–2 minutes longer, checking that the bread does not overbrown.
The Bread Is Not Golden Or Crisp
Make sure the bread is buttered on the outside and that the sandwiches are arranged in one uncrowded layer. Bake until both sides are golden and crisp.
The Sandwiches Are Browning Unevenly
Leave space between the sandwiches on the pan, and flip each one after the first 5 minutes of baking.
Optional Add-Ins
The four-ingredient version is the tested core recipe, but the original post also offers a couple of easy add-in ideas:
- Cooked Bacon: Add 2 strips of cooked bacon between the bread slices.
- Caramelized Onions: Add caramelized onions with the cheese for extra savory flavor.
These are optional ideas from the original article, not required ingredients in the core recipe.
Storage And Reheating
Grilled cheese is best served right away. Refrigerate leftovers in an airtight container for up to 3 days. Reheat in an air fryer or toaster oven until warmed through and crisp. Other reheating methods are fine, but an air fryer or toaster oven best restores the crisp exterior.

Serving Suggestions
Grilled cheese is especially good with tomato bisque soup, a simple green salad, grilled or roasted vegetables, or chicken for a more substantial meal.

My sister and I are hosting our Red Hat group in April. And the 12th of April is National Grilled Cheese day and we are thinking of this with homemade tomatoe basil soup. With a raw Veggie tray. Sounds so yummy.
The best way to make a bunch of grilled cheese sammies at once! Made these for my daughter’s skating team with tomato soup and it was so nice that they were all done at the same time.
I didnโt take a photo of my awesomely beautiful sandwiches. Boohoo! Believe meโฆthey were perfect and oh so delicious! This was the first time I had ever made grilled cheese sandwiches in the oven (Iโm 64!) and itโs the only way Iโll be making them in the future! So easy and clean up was a breeze!
We love to hear it! And so glad you enjoyed ๐
