Sheet Pan Grilled Cheese
Sheet Pan Grilled Cheese makes it easy to bake four golden, melty grilled cheese sandwiches at once. Assemble them with butter on the outside, optional mayonnaise on the inside, and sliced cheese, then bake, flip, and serve right away.

- 8 slices bread sourdough, thick-cut white bread, or Texas toast
- 8 slices cheese use a sliced variety with good meltability, such as cheddar or American cheese
- 4 teaspoons softened butter
- 2 teaspoons mayonnaise optional
Preheat a conventional oven to 400°F. Set out a 13 × 18-inch half sheet pan; do not grease it.
For each sandwich, spread ½ teaspoon softened butter on the outside of each bread slice. If using mayonnaise, spread ¼ teaspoon on the inside of each bread slice.
Place 2 slices of cheese between two bread slices, with the mayonnaise sides facing the cheese. Close the sandwich. Repeat to make 4 sandwiches, then arrange them on the sheet pan in a single, uncrowded layer.
Bake for 5 minutes. Flip each sandwich and bake for 2–3 minutes more, until the bread is golden and crisp on both sides and the cheese is fully melted. If thicker cheese needs more time to melt, bake for 1–2 minutes longer.
Serve immediately.
