Mascarpone Toast Ingredients
For the Base
- Thick crusty bread (we used sourdough)

We are big fans of sourdough bread for mascarpone toast. The flavor of the bread along with the soft inside and crunchy crust makes it a perfect bread for schmearing mascarpone across it.
If you can’t find sourdough bread, feel free to use of the other bread types below. The mascarpone spread is rich and creamy so a heartier bread is key:

How to Make Mascarpone Toast

Begin by spreading butter evenly on both slices of the bread. Heat a large cast iron skillet over medium heat, toast bread on both sides and set aside when it’s golden brown.

Add the softened mascarpone, lemon juice, and zest to a mixing bowl and mix until combined.

Use a knife or spatula to spread each piece of toasted bread with a generous amount of the mascarpone mixture.

For Savory Toast: Add olive oil, Italian seasoning, and salt into a large bowl and whisk to combine. Then, add the sliced tomatoes. Spoon the oil mixture over the tomatoes. Top the mascarpone with tomatoes and sprinkle with feta cheese. Sprinkle with salt, pepper, and drizzle the remaining olive oil from the tomatoes over the toast.
For Sweet Toast: Spread jam on top of the mascarpone and then top with fresh berries. Finally, drizzle on honey, to taste.

- 1-2 tablespoons raspberry jam or preserves
- 10-12 fresh raspberries
- Honey to taste
- Lemon zest to taste
Savory Variation – Marinated Tomato & Feta
- 1 tablespoon olive oil
- 1 medium/large tomato thinly sliced
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- 2-3- oz. feta crumbles
- Flakey salt to taste
- Cracked black pepper to taste

Tips & Notes
- We used raspberry jam and fresh raspberries, but blueberry jam and fresh blueberries could easily be subbed.
