Easy Cucumber Sandwiches

There is nothing better than cheesy sandwiches, they are always a crowd-pleaser. Whether you are making a simple lunch for the family or hosting a summer bbq, these cucumber sandwiches with cream cheese are simple yet so delicious.

Cream cheese may be one of our favorite ingredients, we have so many cream cheese recipes on the site! It is also a featured ingredient in this recipe, too.

Cream cheese: traditionally, cucumber sandwiches use butter. We took it up a notch and added room-temperature cream cheese. Be sure the cream cheese is spreadable or else it will tear holes in the soft bread.

Cucumbers: we recommend using English cucumbers. However, you can use any type of cucumber. Just be sure to thinly slice them.

White bread: find yourself the squishiest white bread. It makes the recipe if you have delicious bread that you can sink your teeth into.

Fresh dill: chopped fresh dill elevates the flavor profile of this sandwich.

Green onions: onion and cucumber are a great combination. Don’t skip it.

Lemon zest: lemon zest will lighten up these sandwiches and set them above any other cucumber sandwich that you’ve ever had.

Ingredient Substitutions

  • 1/4 cup fresh dill—> 1 tablespoon dried dill
  • 1/4 cup chopped green onions —> 1/4 cup minced white onion or 1 tablespoon dried chives or green onion

  1. Spread 1 oz. of softened cream cheese onto each slice of bread. Sprinkle 1 tablespoon of fresh dill on each slice of bread. 
  2. Add the thinly sliced cucumber on top of the cream cheese and then the lemon zest and green onions.
  3. Season each sandwich with ¼ teaspoon of salt. 
  4. Place the tops of each sandwich and then cut the crusts off of each sandwich. Then, cut them into 3’s. 
  5. Serve immediately or refrigerate in an airtight container.

How do you keep cucumber sandwiches from going soggy?

There are a few different ways you can keep cucumbers from getting soggy.

One option is to toss the cucumber slices with salt and transfer them to a fine sieve in the sink. Allow them to sit for 15 to 20 minutes to draw excess moisture from the cucumbers. This will help them from getting soggy in the sandwich.

When storing the cucumber sandwiches, keep a piece of paper towel in the airtight container so it absorbs excess moisture.

You can add many different ingredients to this sandwich to make it your own. Thinly sliced onions, sprouts, or feta are some great options.

How do I make this sandwich dairy free?

Storage

Place a paper towel in an airtight container and place the sandwiches on top of the paper towel. Store them for 1-2 days, any longer and they will begin to get soggy.

Ingredients 

  • 8 slices white sandwich bread
  • 8 oz. cream cheese, room temperature
  • ¼ cup minced fresh dill, separated
  • 2 cups thinly sliced English cucumber, separated (~1 large cucumber)
  • 2 tablespoons lemon zest, separated
  • ¼ cup thinly sliced green onions, separated
  • 1 teaspoon kosher salt, separated

Instructions 

  • To assemble the sandwiches, lay 4 slices of bread onto a cutting board. Spread 1 oz. of cream cheese onto each slice. Sprinkle 1 tablespoon of fresh dill on each slice of bread.

  • Next, layer the cucumber slices so they are slightly overlapping to cover the cream cheese and dill.

  • Lay down the remaining slices of bread and spread 1 oz. of cream cheese onto each slice. Add ½ teaspoon of lemon zest and sprinkle on 1 tablespoon of green onions to each slice.

Tips & Notes

  • Any soft white sandwich bread will work.
  • You can use a regular cucumber, but we would not recommend that if you are making these ahead of time. They may become soggy. We prefer an English cucumber.
