Cucumber Sandwiches with Cream Cheese
These cucumber sandwiches are a simple snack, lunch or dinner option. They are made with a cream cheese spread, fresh dill, and cucumbers.

- 8 slices white sandwich bread
- 8 oz. cream cheese room temperature
- ¼ cup minced fresh dill separated
- 2 cups thinly sliced English cucumber separated (~1 large cucumber)
- 2 tablespoons lemon zest separated
- ¼ cup thinly sliced green onions separated
- 1 teaspoon kosher salt separated
To assemble the sandwiches, lay 4 slices of bread onto a cutting board. Spread 1 oz. of cream cheese onto each slice. Sprinkle 1 tablespoon of fresh dill on each slice of bread.
Next, layer the cucumber slices so they are slightly overlapping to cover the cream cheese and dill.
Lay down the remaining slices of bread and spread 1 oz. of cream cheese onto each slice. Add ½ teaspoon of lemon zest and sprinkle on 1 tablespoon of green onions to each slice.
Season each sandwich with ¼ teaspoon of salt.
Place the tops of each sandwich and then cut the crusts off of each sandwich. Then, cut them into 3’s.
Serve immediately or refrigerate in an airtight container.
- Any soft white sandwich bread will work.
- You can use a regular cucumber, but we would not recommend that if you are making these ahead of time. They may become soggy. We prefer an English cucumber.
