When I want a big bowl of cozy comfort food without turning on the oven, this microwave lasagna is my answer: saucy noodles, savory sausage, creamy cottage cheese, and gooey mozzarella all tucked into one mug. It is a true lasagna for one, with about 10 minutes of prep and a quick 2-minute microwave finish—perfect for a dorm, office kitchenette, or tiny kitchen. I love that it feels like a real cheesy dinner, not sad leftovers reheated in a bowl.

❤️ Why You’ll Love This Microwave Lasagna

  • Actually single serve: This wide-mug format makes one generous, no-leftovers portion for a solo comfort-food craving. It is the kind of single serve lasagna I reach for when a full casserole sounds like too much.
  • Two-minute finish: With cooked noodles and cooked sausage ready to go, the microwave only has to warm the layers and melt the cheese—not cook raw meat or dry noodles from scratch.
  • Extra-creamy filling: Cottage cheese gives every bite a creamy, hearty ricotta-like feel, while mozzarella brings the essential stretchy, gooey top.
  • Hearty but unfussy: Marinara, Italian sausage, and familiar cheese make this taste like a cozy little lasagna dinner without an oven or a pile of dishes.

What You Need for a Lasagna Mug

My microwave lasagna recipe starts with cooked lasagna noodles that can be cut or torn to fit flat in a mug, plus marinara, fully cooked Italian sausage, cottage cheese, and shredded low-moisture mozzarella. Parmesan, fresh basil, and Italian seasoning are lovely finishing extras, but the saucy, cheesy core is intentionally simple.

A microwave-safe glass or ceramic mug or cup that holds at least 12 ounces is essential; I like a straight-sided, wide 12- to 16-ounce cup because it gives the layers room and keeps the portion easy to scoop. Full-fat or well-drained cottage cheese gives the filling a thicker, creamier texture because it has less free liquid than a watery container. Freshly shredded low-moisture mozzarella melts especially smoothly, though a good bagged shred works in a pinch.

If I have time for a larger project, my cottage cheese lasagna is the full oven-baked, family-size version; this little mug is for fast solo-dinner energy.

Ingredient Swaps

  • Sausage: Mild or hot Italian sausage both work beautifully. Cooked ground beef or turkey is a fine stand-in, although sausage gives my mug the most classic flavor.
  • Cheese: Ricotta can replace cottage cheese 1:1 if that is your preference, but cottage cheese is my quick, creamy favorite. Provolone or a little Parmesan makes the mozzarella layer even cheesier.
  • Vegetarian option: Chopped cooked spinach or sautéed mushrooms can stand in for the sausage; drier vegetables keep the sauce from getting loose.
  • Noodles: Cooked standard lasagna noodles work best. No-boil noodles also work — just add 2 extra tablespoons of sauce, water, or broth so the noodles soften properly in the microwave.

For another fast, cheese-forward dinner for one, I also love this microwave mac and cheese.

Mug Size, Microwave Wattage, and Cheese-Melt Tips

Wondering how long to microwave lasagna? My tested baseline is 1½ to 2 minutes on high in a 1,000-watt microwave, with a check after the first minute and brief 15-second additions for a lower-wattage machine. A 12- to 16-ounce microwave-safe mug or cup with at least 1 inch of headspace makes a huge difference; setting it on a microwave-safe plate catches any enthusiastic sauce bubbles.

I use a loose microwave-safe cover or paper towel to tame splatters. Microwaves heat unevenly, so a short rest after heating lets warmth move into the dense center while the mozzarella finishes melting. The happy visual cue is sauce bubbling around the edges, melted mozzarella, and a steaming-hot center—not a browned top, because a microwave will not give this little lasagna oven-style browning.

Easy Variations for This Single Serving Lasagna

Once you have the basics, this single serving lasagna can swing spicy, veggie-packed, or extra cheesy without losing its cozy mug-dinner charm.

Spicy Sausage

Hot Italian sausage and a pinch of red pepper flakes make a bold, saucy version for anyone who wants a little heat with the cheese pull.

Veggie-Forward

Cooked spinach and mushrooms make a hearty meatless filling. Well-squeezed spinach is the key to keeping the mug lasagna creamy rather than watery.

Extra-Cheesy

A little Parmesan in the cottage cheese layer plus provolone with the mozzarella turns this into my most gloriously gooey version.

Comfort-Food Pairing

This mug is plenty satisfying on its own, but a side of cheesy garlic bread turns it into a more substantial comfort-food meal.

No-Boil Noodle Swap

Short on time? Skip boiling noodles entirely. Break no-boil lasagna sheets to fit your mug and add 2 extra tablespoons of sauce, water, or broth to each layer. The extra liquid lets the noodles hydrate and soften right in the microwave — tested and approved.

Troubleshooting a Mug Lasagna

  • The center is still cool: Microwave wattage varies, and short 15-second intervals warm the middle more gently than one long blast that can toughen the edges.
  • The sauce bubbled over: The mug was likely too full or narrow. A 12- to 16-ounce vessel with headspace and a plate underneath keeps cleanup painless.
  • It looks watery: Thick marinara, full-fat or well-drained cottage cheese, and thoroughly drained cooked noodles make the best texture. Extra moisture from vegetables can also loosen the layers.
  • The cheese is not melted: Freshly shredded low-moisture mozzarella melts most reliably. A brief extra burst followed by a short rest usually brings everything together.

My microwave lasagna is intentionally saucy, but it should still have cozy, distinct layers and a hot center.

Storing and Reheating Leftovers

Leftovers are rare at my house, but they are absolutely supported. I cool any extra portion promptly, move it to an airtight container, and refrigerate it for up to 2 days. A microwave-safe bowl, a loose cover, and brief reheating intervals bring it back to hot and saucy; a spoonful of marinara restores moisture if needed. I do not recommend freezing the finished mug until that texture has been specifically tested.

FAQs

Can you microwave lasagna?

Yes. I microwave lasagna successfully when the noodles and meat are already cooked and I use a microwave-safe glass or ceramic mug or bowl. For this single-serving version, the microwave heats the layers through and melts the cheese, so it is much faster than a traditional baked lasagna.

How long do you microwave lasagna?

This microwave lasagna takes about 1½ to 2 minutes on high in a 1,000-watt microwave because the noodles and Italian sausage are cooked before they go into the mug. Wattage varies, so I check after the first minute and add 15-second intervals until the sauce bubbles at the edges, the mozzarella is melted, and the center is hot.

What size mug should I use for microwave lasagna?

I use a microwave-safe glass or ceramic mug or cup that holds at least 12 ounces; a 12- to 16-ounce vessel gives the layers room and helps prevent sauce from bubbling over. A narrow mug filled to the rim is not ideal, and a microwave-safe plate underneath catches any extra sauce bubbles.

Can I use cottage cheese instead of ricotta in lasagna?

Absolutely. Cottage cheese makes a creamy, hearty filling and is a great quick alternative to ricotta. For the best texture, I choose full-fat cottage cheese or drain off excess liquid first, since very watery cottage cheese can make a small mug lasagna loose.

Can I make this lasagna for one ahead of time?

I prep the components ahead by cooking the noodles and Italian sausage, then refrigerating them separately for easy assembly later. For the best texture, I assemble and microwave the mug lasagna right before eating instead of holding a fully assembled mug for long.

Ingredients

  • 2 cooked lasagna noodles, torn into mug-sized pieces
  • ¼ cup marinara sauce
  • ¼ cup fully cooked Italian sausage, crumbled (about 1 link)
  • 3 tablespoons full-fat cottage cheese
  • ¼ cup shredded low-moisture mozzarella cheese
  • 1 pinch Italian seasoning, optional
  • fresh basil, for garnish (optional)
  • ½ teaspoon olive oil or cooking spray, for the mug

Instructions

  • Lightly coat the inside of a 12-16 ounce microwave-safe glass or ceramic mug with ½ teaspoon olive oil or cooking spray. Tear the cooked lasagna noodles into pieces that sit flat in the mug. Set the mug on a microwave-safe plate to catch any bubbling sauce.
  • Spoon a thin layer of marinara into the bottom of the mug, then add a layer of noodle pieces, cottage cheese, crumbled Italian sausage, and mozzarella. Repeat the layers until ingredients are used, finishing with marinara and mozzarella on top. Press gently with a spoon and leave at least 1 inch of headspace for bubbling.
  • Loosely cover the mug with a microwave-safe cover or damp paper towel and microwave on HIGH (1,000 watts) for 1 minute. Carefully uncover, give the center a gentle stir, then re-cover and microwave 30-60 seconds more until the sauce bubbles at the edges and the mozzarella is fully melted. For lower-wattage microwaves, add 15-second bursts and check between each.
  • Let the mug sit covered on the counter for 1 minute before eating — the residual heat finishes warming the center and the layers settle. Use an oven mitt because the mug will be very hot. Top with fresh basil or a sprinkle of Parmesan if desired.

Tips & Notes

No-boil noodles: These work great — just add 2 extra tablespoons of sauce, water, or broth per serving so the noodles have enough liquid to soften in the microwave.
