Street Corn Chopped Bagels

I’m taking your average bagel and turning it into something wildly better. Think: crispy bacon, charred sweet corn, spicy jalapeños, cream cheese, and jammy soft-boiled eggs—all chopped together into one ridiculously good spread and piled high on a toasted bagel. These street corn chopped bagels are messy, loaded, and exactly what I want to eat.

Why You’ll Love This Bagel Situation
- Sweet + smoky + spicy + creamy (aka flavor jackpot).
- Perfect for breakfast, brunch, or “breakfast for dinner.”
- Uses simple ingredients but feels extra.
- That chopped filling? Game changer.
What You Need
This is one of those “throw it all together and magic happens” recipes: bacon (crispy, obviously), red onion, corn (fresh or frozen—both work!), cream cheese (softened = key), jalapeño, fresh cilantro, cotija cheese, soft-boiled eggs, lime juice, and bagels (go for a good one 👀).

Let’s Make It
1. Cook the Bacon
I heat a large skillet over medium-high heat and cook the bacon until it’s perfectly crispy (none of that floppy nonsense). Then I remove the bacon but keep about 1 tablespoon of that liquid gold bacon fat in the pan.
2. Char the Corn
I add the corn, red onion, and salt to the skillet. I cook it over medium heat until the corn gets a little char—this is where the flavor builds, so I don’t rush it. Then I remove it from heat and set it aside.
3. Chop It All Up
Now for the fun part. I add the softened cream cheese to a cutting board and pile on jalapeño, cilantro, cotija, soft-boiled eggs, bacon, and the charred corn mixture. Then I go in with my biggest knife and chop it all up until everything is combined into chunky, creamy, bite-sized goodness. It’s not supposed to look perfect, but I promise it tastes amazing.
4. Build Your Bagel
I toast the bagels, then pile that loaded cream cheese mixture on top. I finish it with a squeeze of fresh lime juice and maybe a little extra cotija if I’m feeling fancy.
Tips for Success
- Softened cream cheese is non-negotiable because it makes mixing way easier.
- Don’t skip the char on the corn, it adds so much flavor.
- Chop, don’t stir: The texture is everything here.
- Use good bagels: They’re the base, after all.
Make It Your Way
Want to switch things up? Go for it.
You can skip the bacon and cook the corn and onion in avocado oil for a vegetarian version.
Want more heat? Keep the jalapeño seeds or add hot sauce.
Need extra protein? Add another egg or two.
No cotija? Feta works in a pinch.

Storage
This is best eaten fresh, but if I have leftovers, I store the filling in an airtight container in the fridge for up to 2 days.
Just know: It might not look as pretty, but it still tastes great.
