Street Corn Chopped Bagel
This delicious street corn chopped bagel is made with cream cheese, bacon, eggs, corn, and cotija. Chopped up together to make the most delicious breakfast spread for your favorite bagel.

- 4 pieces of bacon
- ¼ medium red onion minced
- 1 cup fresh or frozen corn kernels
- ½ teaspoon kosher salt
- 8 oz. cream cheese softened
- 1 medium jalapeño thinly sliced
- ¼ cup chopped fresh cilantro
- ¼ cup crumbled cotija cheese
- 4 soft-boiled eggs
- 1 tablespoon fresh lime juice
- 4 plain bagels halved and toasted
Heat a large skillet over medium/high heat. Add the bacon and cook it until it is fully cooked (not rubbery). Remove bacon and reserve 1 tablespoon of oil.
Place the skillet back on the stove with the reserved oil. Heat the skillet to medium heat, and add the corn, onion, and salt to the pan. Cook until the corn has a char on it. Remove from heat and set aside.
Place the cream cheese on a cutting board and top with jalapeno, cilantro, cotija, eggs, and bacon. Using the biggest knife you have, chop until you have bite-sized pieces.)
Divide the filling among the 4 bagels and serve!
- Skip the bacon and cook the corn and onions in 1 tablespoon of avocado oil to make this vegetarian.
