Chocolate Chip Ricotta Pancakes
Ingredients
- 1 cup whole milk ricotta cheese
- ยฝ cup whole milk
- 2 large eggs
- 2 tablespoons butter melted
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- โ cup chocolate chips
Instructions
- In a large bowl, whisk together the ricotta, milk, eggs, melted butter, and vanilla until smooth.ย
- Next add the flour, sugar, and baking powder. Whisk just until no large lumps remain.ย
- Add the chocolate chips and fold them gently into the batter.ย
- Preheat a large nonstick skillet or griddle over medium heat. Grease it with butter or nonstick cooking spray.ย
