Irresistibly Yummy Poutine Fries

Why buy poutine when you can make your own delicious version from scratch!? Making your own crispy french fries may sound intimidating, but this recipe makes it easy peasy. We’ll show you how to cut ’em and fry ’em just right so you have the PERFECT homemade fries every time. 

Poutine is the national dish of Canada, but it’s become so popular here in the States that you’ll find poutine shops all over the US. Even so, it’s not as popular as other American dishes, so it can be hard to find! But don’t worry, we’re here to help you out with this YUMMY poutine recipe so you can satisfy your poutine craving right when it hits.

How to Make the Best Poutine Recipe

PREPARE FRIES

Start by cutting the potatoes into ½ x ¼ inch sticks. Then soak them in ice water for 15 minutes

FRY POTATOES

Heat the oil in a Dutch oven to 325℉. Fry the potatoes for 3-5 minutes. Then remove them from the oil and drain on a cooling rack. 

Pro Tip: Try not to fry too many at once! You may need to do this in batches for even frying.

Next, increase the heat so the temperature rises to 375℉. Fry the potatoes again for 1-2 minutes. Then remove them from the heat and toss them with ¾ tablespoons of salt. Set aside. 

SAUTE ONIONS + GARLIC

Heat a skillet over medium heat and add the butter and onions. Sautee for 2 minutes or until the onions are soft and translucent. 

Then add the garlic and remaining salt and cook for an additional minute. 

MAKE GRAVY

Next, whisk in the flour and cook for at least 1 minute. Add in the chicken broth and whisk vigorously, making sure to scrape along the sides. The gravy should thicken immediately. 

ASSEMBLE + SERVE

Turn the oven on to broil and place the french fries in a 9×13-inch casserole dish. Layer the gravy on top and cover with cheese curds. 

Place in the oven for 2-3 minutes. The cheese curds shouldn’t melt but just warm up slightly. 

Now your delicious poutine is ready to eat! Serve and enjoy!

Tips & Tricks

For the extra-crispy fries, you can freeze the potatoes before frying them. Just spread them on an unlined baking sheet and let the potatoes freeze for at least 1 hour or overnight. 

When frying your French fries, it’s important to use the correct oil temperature. Too low and your fries will be greasy; too high and they’ll burn. Using a kitchen thermometer or deep fryer with a built-in temperature gauge is the best.

Watch the amount of salt in your broth. If you want your poutine gravy to be more authentic by using canned broth, be mindful of the salt content. Different brands can vary greatly in salt concentration, so always taste test before adding additional salt to your gravy.

Storage

This poutine recipe is best served immediately! But should you have leftovers: Store in an airtight container in the fridge for up to 3 days. Note that the longer the poutine is stored, the soggier the fries will get. 

To reheat, we recommend using an air fryer as it will get the fries the crispest. You can also broil them in the oven. Just be sure to watch them to keep them from burning!

Ingredients 

  • 3 large russet potatoes
  • 1 tablespoon salt, divided
  • 1 teaspoon ground black pepper
  • 2 tablespoons unsalted butter, divided
  • ¼ medium white onion, diced
  • 1 clove garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 5 oz. cheese curds
  • Oil for frying

Tips & Notes

  • Frozen french fries and premade gravy can make this a much easier recipe.
  • We used 64 oz. of vegetable oil.
