Pepperoni pizza bites are the taste of nostalgia! And mine are made with a 4-ingredient high-protein dough (thank you, blended cottage cheese), and tossed in melted butter, Italian seasoning and parmesan right at the end for ultimate pizza vibes.

I like to dip mine in pizza sauce and serve them for an easy weeknight twist on pizza night or as a bite-sized game day appetizer. I can’t wait for you (and your kiddos!) to try these ❤️.

What You Need for These Pizza Bites

For the dough: This 4-ingredient protein dough is the GOAT. All you need is blended cottage cheese, all-purpose flour, baking powder and a little salt.

For the pizza toppings: I’m just using a few simple pizza toppings for these pizza bites — all you need is shredded mozzarella and mini pepperoni.

For the melted butter: Before serving the pizza bites, you’ll toss ’em in melted butter, parmesan and Italian seasoning. It makes them taste like breadsticks — yum!

For dipping: Marinara or pizza sauce! My other site, Fit Foodie Finds, has an amazing 4-ingredient pizza sauce if you’re feeling like making your own dipping sauce.

Directions at a Glance

  1. Prepare the dough: Fold together the blended cottage cheese, all-purpose flour, baking powder and salt. Once it becomes a dough ball, you’re ready to roll it out.
  2. Roll out the dough: Roll out the dough into a 10×10-inch square and then cut into 1-inch squares (aka the bites!).
  3. Assemble the pizza bites: Top the bites with shredded mozzarella and mini pepperoni (or any other toppings your pizza-loving heart desires!).
  4. Bake: Place on a greased baking sheet and bake until golden brown.
  5. Toss in butter mixture: Toss all the bites in a bowl filled with melted butter, parmesan cheese and Italian seasoning.
  6. Dip and enjoy! Serve with pizza sauce as the dip, and enjoy these cute little yummy pizza bites!

Storage

To store the pizza bites after they are cooked, let them cool and then store them in an airtight container in the fridge for up to 4 days.

Freezing Instructions

To freeze, follow steps 1-5 in the recipe card. Then, place the pizza bites on a late plate or baking sheet and freeze for 1 hour or until frozen. Once frozen, transfer to a freezer-safe food storage bag or container for up to 3 months.

To reheat, place the pizza bites in the air fryer and cook at 400ºF for 2-3 minutes. Toss in melted butter mixture (step 6 in the recipe card), and then serve with marinara for dipping.

Ingredients 

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 cup blended 2% cottage cheese
  • ½ cup shredded mozzarella
  • 2 oz. mini pepperoni
  • 1 tablespoon unsalted butter
  • 1 teaspoon Italian seasoning
  • 2 tablespoons grated parmesan cheese
  • Pizza sauce or marinara for dipping

Instructions 

  • Preheat the oven to 350℉ and spray a baking sheet with cooking spray or line it with parchment paper. Set aside.
  • Add the flour, baking powder, salt, and blended cottage cheese to a large mixing bowl. Stir to combine. Once a dough ball begins to form, turn it out onto a lightly floured surface. Knead until smooth.

  • Roll the dough out to a square, roughly 10×10 inches. Cut into 1-inch x 1-inch squares.

  • Transfer to the prepared baking sheet and top with mozzarella and 1 or 2 mini pepperonis.

  • Bake for 10 minutes or until the cheese is melted and the bottoms of the pizza bites are golden brown. Remove from the oven and set aside.

  • Melt the butter in a large glass bowl. Add the pizza bites, parmesan cheese, and Italian seasoning and toss to combine.

  • Serve with your favorite pizza dipping sauce.

Tips & Notes

  • Greek yogurt is a great substitute for blended cottage cheese.
  • Make this recipe vegetarian by replacing the pepperoni with sliced olives or just cheese.
