- 1 cup all-purpose flour
- 1.5 teaspoons baking powder
- ½ teaspoon sea salt
- 1 cup blended 2% cottage cheese
- ½ cup shredded mozzarella
- 2 oz. mini pepperoni
- 1 tablespoon unsalted butter
- 1 teaspoon Italian seasoning
- 2 tablespoons grated parmesan cheese
- Pizza sauce or marinara for dipping
Preheat the oven to 350℉ and spray a baking sheet with cooking spray or line it with parchment paper. Set aside.
Add the flour, baking powder, salt, and blended cottage cheese to a large mixing bowl. Stir to combine. Once a dough ball begins to form, turn it out onto a lightly floured surface. Knead until smooth.
Roll the dough out to a square, roughly 10x10 inches. Cut into 1-inch x 1-inch squares.
Transfer to the prepared baking sheet and top with mozzarella and 1 or 2 mini pepperonis.
Bake for 10 minutes or until the cheese is melted and the bottoms of the pizza bites are golden brown. Remove from the oven and set aside.
Melt the butter in a large glass bowl. Add the pizza bites, parmesan cheese, and Italian seasoning and toss to combine.
Serve with your favorite pizza dipping sauce.
- Greek yogurt is a great substitute for blended cottage cheese.
- Make this recipe vegetarian by replacing the pepperoni with sliced olives or just cheese.
