High-Protein Pepperoni Pizza Bites Recipe

These pepperoni pizza bites are made with a high-protein dough (thank you, blended cottage cheese!), and topped with mozzarella, parm and mini pepperoni for ultimate pizza vibes.

Ingredients

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 cup blended 2% cottage cheese
  • ½ cup shredded mozzarella
  • 2 oz. mini pepperoni
  • 1 tablespoon unsalted butter
  • 1 teaspoon Italian seasoning
  • 2 tablespoons grated parmesan cheese
  • Pizza sauce or marinara for dipping

Instructions

  • Preheat the oven to 350℉ and spray a baking sheet with cooking spray or line it with parchment paper. Set aside.
  • Add the flour, baking powder, salt, and blended cottage cheese to a large mixing bowl. Stir to combine. Once a dough ball begins to form, turn it out onto a lightly floured surface. Knead until smooth.

  • Roll the dough out to a square, roughly 10x10 inches. Cut into 1-inch x 1-inch squares.

  • Transfer to the prepared baking sheet and top with mozzarella and 1 or 2 mini pepperonis.

  • Bake for 10 minutes or until the cheese is melted and the bottoms of the pizza bites are golden brown. Remove from the oven and set aside.

  • Melt the butter in a large glass bowl. Add the pizza bites, parmesan cheese, and Italian seasoning and toss to combine.

  • Serve with your favorite pizza dipping sauce.

Notes

  • Greek yogurt is a great substitute for blended cottage cheese.
  • Make this recipe vegetarian by replacing the pepperoni with sliced olives or just cheese.
