Easy Cheesy Rice

You may think of cheesy rice as a basic side dish and though this cheesy rice is simple, it’s very flavorful. This cheesy rice is jazzed up with sauteed garlic, and seasonings, and cheesed up with parmesan cheese.

  • Rice- we prefer this recipe with long-grain white rice, but you can use brown rice, too. Just remember that brown rice takes double the amount of time.
  • Onion and garlic- sauteeing onion and garlic before cooking the rice add a ton of flavor to the rice.
  • Salt- do not skip the salt! It enhances all of the flavors in the rice.
  • Chicken broth- using broth instead of water to cook the rice gives the rice extra flavor.
  • Parmesan cheese- we used parmesan cheese because it gives a salty and nutty flavor to the parmesan cheese. We highly recommend using freshly grated Parmesan cheese over the pre-shredded parmesan. Freshly shredded parmesan melts better!

Quick Instructions

  1. Sauté the onion and garlic and then add the rice and salt to the pot and cook it for another minute. This will toast the rice to give it an extra toasty flavor. 
  2. Add the broth to the rice and stir. Cover with a lid and reduce heat to simmer. Cook for 20 minutes, or until all of the broth has been absorbed.
  3. Remove the pot from the heat and add the parmesan cheese. Stir until melted into the rice.

  • We made this white and brown rice. The brown rice takes almost double the time. 
  • We used parmesan cheese, but any cheese could be substituted. Asiago or romano would be comparable.
  • Other cheeses like cheddar or mozzarella would also be good but would change the consistency slightly.

Storage

Let the cheesy rice cool completely and then store it in an air-tight container for up to 5 days.

Reheat instructions: to reheat the cheesy rice add the rice to a skillet or place it in the microwave and add a few tablespoons of broth. Heat the rice over medium/low heat on the stove top until warm or on high for 20-second increments in the microwave.

Ingredients 

  • 1 tablespoon olive oil
  • ¼ yellow onion, minced
  • 1 garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 cup white rice
  • 2 cups chicken broth
  • 2 oz. shredded parmesan cheese, ~½ cup

Instructions 

  • Heat olive oil in a stockpot over medium/high heat. When the oil has becomes fragrant add the onion and garlic and cook for 1-2 minutes. Add the rice and salt to the pot and cook it for another minute. This will toast the rice.
