The Most Important Tip for Making Scones–> The key to butter in scones is to keep it as cold as possible– that way you end up with flakey, crisp scones.

  • Make sure to measure your flour using the spoon and level technique– overpacking your flour can create a dry, dense scone.
  • We’re using a lot of baking powder to make sure we get super light and fluffy scones!
  • The salt helps enhance the flavor of the bacon and cheese.
  • The heavy cream is going to add richness and keep our scones moist.
  • The bacon and cheddar make these bacon and cheddar scones! Feel free to swap chopped ham, different cheese, leave it out, whatever you like!

Ingredients You Need

  • All-purpose flour- we only recommend using all purpose flour. Just be sure your all purpose flour isn’t old or expired, that can significantly effect any baked good!
  • Baking powder – baking powder NOT baking soda. Be sure you double check before adding.
  • Salt– never skip the salt in baked goods, it makes everything better!
  • Cold butter– if we haven’t stressed it enough you need COLD COLD COLD butter!
  • Large eggs- this is another ingredient where size/quantity matters. Be sure you use large eggs (not medium or extra large).
  • Heavy cream– any brand of heavy cream will do!
  • Chopped cooked bacon– you can cook your bacon in the oven, in the air fryer, or even in the microwave. Just be sure not to over cook your bacon!
  • Shredded cheddar cheese– we highly suggest that you shred your own cheese for these scones. Use your favorite block of cheddar cheese and shred shred shred.

How to Make Bacon and Cheddar Scones

Make the Dough

You are going to start off by using your food processor! Pulse together the flour, baking powder, and salt.

Next, add the cubed butter and pulse until the butter is the size of small peas– about 30 seconds.

Transfer the mixture to a large bowl and add the eggs and cream. Stir until a shaggy dough forms. Then add the bacon and cheddar cheese and stir to combine.

Don’t over mix! This is when we stress that you do not want to over mix the dough. You want there to be chunks of cold butter in your dough, that’s what makes scone dough crumbly and flakey.

Roll Out the scones

After all of the ingredients are combined into a dough, you are going to pour the scone dough onto a floured and clean surface.

Remember that this scone dough is going to be a bit flakey and feel dry, don’t worry!

Roll the dough out carefully with a rolling pin into a 1″ thick rectangle shape.

Cut your scones into your desired shape and place them on a parchment lined baking sheet.

Let Scones Set

After your scones are all placed on the parchment paper, place the baking sheet in the freezer for 15 minutes to let the scones chill and set.

Bake Bake Bake

Remove the scones from the oven and brush them with heavy cream. Place them in the oven and bake them at 400ºF for 12-14 minutes or until they are golden brown.
