Bacon and Cheddar Scones

These bacon and cheddar scones require no fancy equipment and are ultra cheesy and savory thanks to the salty bacon and shredded cheddar cheese. It's a simple yet delicious breakfast that's oh-so-satisfying.

Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup cold butter cubed
  • 2 large eggs
  • ½ cup heavy cream
  • ½ cup chopped cooked bacon
  • ½ cup shredded cheddar cheese

Instructions

  • In the bowl of a food processor, pulse together the flour, baking powder, and salt. 
  • Next, add the cubed butter and pulse until the butter is the size of small peas-- about 30 seconds. 
  • Transfer the mixture to a large bowl and add the eggs and cream. Stir until a shaggy dough forms. 
  • Then add the bacon and cheddar cheese and stir to combine. 
  • Transfer the dough onto a clean surface (it will look dry, don’t worry!) and pack it together with your hands. Then, roll the dough out gently to 1” thick. 
  • Slice scones into your desired shape-- circles, squares, or triangles and transfer onto a parchment-lined (or Silpat-lined) baking sheet. 
  • Place the scones in the freezer for 15 minutes to chill. 
  • While the scones chill, preheat your oven to 400ºF. 
  • Once the oven is preheated, brush the top of the scones with milk or cream and sprinkle with flake salt, if desired. 
  • Bake for 12-14 minutes, or until the scones are golden brown around the bottom edges. 
  • Enjoy warm or at room temperature. Store any leftover scones in an airtight container in the fridge for up to one week. 

Notes

  • Make sure to measure your flour using the spoon and level technique-- overpacking your flour can create a dry, dense scone. 
  • Were using a lot of baking powder to make sure we get super light and fluffy scones! 
  • The salt helps enhance the flavor of the bacon and cheese. 
  • The key to butter in scones is to keep it as cold as possible-- that way you end up with flakey, crisp scones. 
  • The heavy cream is going to add richness and keep our scones moist. 
  • The bacon and cheddar make these bacon and cheddar scones! Feel free to swap chopped ham, different cheese, leave it out, whatever you like!
