You can find Reuben egg rolls on most bar menus these days, but I first fell in love with this crunchy appetizer at Voyager Brewing Company in Grand Marais, MN. They come out steamy hot, crunchy, and served alongside the most delicious homemade thousand island dressing. I had to try to recreate them.
Every time I serve these easy Reuben egg rolls, I always get asked for the recipe. It’s so easy to make, and it’s perfect for St. Patrick’s Day, game day, or even just a fun meal any time of year.
So, if you’re looking for something different from your traditional Reuben sandwich, then look no further because this is definitely something you should try. Just assemble, fry, and serve!

What you need for Reuben Eggrolls
- Egg roll wrappers: You’ll need some egg roll wrappers to make the crispy egg rolls. You can typically find these in the refrigerated section of your local grocery store.
- Corned beef: It wouldn’t be a Reuben egg roll recipe without corned beef! Make sure to thinly slice it so that it’s easier to roll.
- Swiss cheese: Melted Swiss cheese is the perfect gooey cheese for these corned beef egg rolls.
- Sauerkraut: Make sure you drain and squeeze the sauerkraut really well before adding it to your egg rolls. This will prevent them from getting soggy.
- Thousand Island dressing: This dipping sauce is a must for any Reuben-inspired dish! If you’re feeling adventurous, you can even make your own Thousand Island dressing using mayo, ketchup, relish, and a few other ingredients.
- 6-quart pot: We used 48 oz. of vegetable oil in a 6-quart pot for frying the egg rolls. You can also place egg rolls in a deep fryer if you have one.

We kept the flavor of these Reuben egg rolls as close to the classic sandwich as possible, but that doesn’t mean you can’t create your own fun spin!
One great idea is to use chicken or turkey instead of corned beef to make these into Rachels! Turkey pastrami and some leftover beef brisket would also taste phenomenal.
Not a fan of Swiss? Any slice of cheese will work! Try cheddar, pepper jack, or even smoked gouda for a delicious twist on this recipe. Can’t find egg roll wrappers? Use wonton wrappers instead and make mini Reuben bites!

To freeze, let the cooked egg rolls cool completely before placing them in a single layer on a baking sheet lined with parchment paper. Freeze for about an hour, then transfer them to a freezer-safe bag or container. To reheat, bake frozen egg rolls at 350°F for about 20 minutes until heated through.

These Reuben egg rolls are perfect on their own, but if you want to make it into a full meal, here are some tasty options to serve with them:

Reuben Egg Rolls

Ingredients
- 6 egg roll wrappers
- 6 oz. corned beef
- 6 slices Swiss cheese
- 6 oz. sauerkraut drained and squeezed, ~⅔ cup
- ¼ cup water
- Oil for frying
- 1 cup Thousand Island dressing
Instructions
- Heat the oil in a large pot to 350℉.
- To assemble the eggrolls, lay 1 wrapper on a cutting board. Layer 1 slice of Swiss cheese, 1 oz. of corned beef, and 1 oz. of sauerkraut in the middle. Fold in two opposite sides towards the middle. Then, pick up one end and tuck it on the other side of the middle. Dip your fingers into the water and wet the last corner. Roll to close.
- Fry the eggrolls in about 3-4 inches of oil for 3 minutes or until golden brown. Make sure not to overcrowd the pot.
- Remove from the pot and place on a paper towel-lined plate.
- Serve with Thousand Island dressing.
