What’s In Cottage Cheese Scrambled Eggs

You’ll only need 5 basic ingredients to make these morning eggs. Any kind of egg works great, but fresh is always best. Feel free to use your favorite variety! 

We whisked some salt and pepper into the eggs for the best flavoring. Then, you’ll need some unsalted butter to cook up your eggs to scrambled perfection. If you’re pro-using oil, don’t come for us! We find butter to be the superior choice in this recipe.

As for the cottage cheese, this gets mixed in last but definitely not least. This ingredient adds a creamy and tangy flavor to the eggs that will make your taste buds sing. Plus, it’s packed with protein and makes for an extra fluffy scramble. Trust us, don’t skip it!

Variations and Substitutions

With such few ingredients, there isn’t really much to substitute. But if you’re feeling adventurous or want to switch things up, here are a couple of ideas:

Add fillings: Turn these scrambled eggs into a complete meal by adding in some fillings like sautéed veggies, cooked bacon or ham, or chopped herbs like chives or parsley for an extra pop of flavor.

Bring the heat: For a spicy twist, mix in some sliced jalapeños, your favorite hot sauce, or red pepper flakes for a kick of heat.

How do I avoid my scrambled eggs from sticking to the pan?

Scrambled eggs are notorious for sticking to the pan, but there are a few tricks you can use to prevent this. Most importantly, you want to be constantly moving those eggs as the cook!

If you have a non-stick pan, make sure to properly butter your pan and cook your eggs over medium-low heat. If you have a stainless steel pan, the temperature of your pan needs to be just right before adding the eggs. A great way to tell when your pan is ready is to put a drop of water on it — if the water dances around and doesn’t immediately evaporate, your pan is ready. 

What does cottage cheese taste like?

Cottage cheese has a mild and slightly tangy flavor, similar to yogurt or sour cream. It is creamy in texture and adds a soft and smooth element to dishes. If you’re not a fan of the taste, don’t worry! The flavor is not overpowering in these scrambled eggs and complements the other ingredients well. 

Why are my cottage cheese eggs watery?

Watery eggs simply mean that you need to cook them a bit longer. The texture of your eggs is totally up to your personal preference, so if you like them more dry then simply cook them for a few extra minutes. 

Storage + Freezer Directions

Store any leftover cottage cheese scrambled eggs in an airtight container and store them in the fridge for up to 3 days. 

We don’t recommend freezing this recipe, as eggs don’t freeze well!

These cottage cheese scrambled eggs would be really good served with a thick slice of toasted bread, then garnished with another tablespoon of cottage cheese drizzled with olive oil and topped with cracked black pepper, flakey sea salt, and crushed red pepper. That’s just our particular fantasy, though.

Ingredients 

  • 4 large eggs
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon unsalted butter
  • ¼ cup cottage cheese

Instructions 

  • Crack the 4 eggs into a bowl and add the salt and pepper. Whisk together and set aside.

  • Heat the butter in a large nonstick skillet over low heat. Once the butter is melted, transfer the eggs into the pan. Using a spatula, stir the eggs in the pan.

  • Add the cottage cheese to the pan and cook, stirring often, until the eggs are cooked. About 3-4 minutes.
