In 2020, Lee, Linley and Emily launched The Cheese Knees as a place to share all our favorite cheesy recipes inspired by our childhood growing up in the midwest. But the story really started in 2010 when Lee founded Fit Foodie Finds, our sister site. As the food blogging world took off, so did Fit Foodie Finds. Lin joined the team in 2014, and has lent her extensive cooking and recipe development skills to every recipe since — and now the recipes on this site. She’s a self-taught home cook and has an incredible palate, and loves creating unique and nourishing recipes. Em joined the team in 2015, managing brand partnerships and sponsored content. A writer by trade, she now serves as our editor-in-chief, writing and editing content on both websites. Rosie joined the team in 2021 as our kitchen manager, and her positive energy, extensive culinary experience, and knowledge of cheese are invaluable to the team. She now also develops recipes for both websites.
