Cream Cheese Stuffed Chocolate Chip Pancakes

- 4 oz. cream cheese room temperature
- ¼ cup light brown sugar
- 2.5 cups all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- 1 tablespoon baking powder
- 2 large eggs
- 8 tablespoons unsalted butter melted and cooled (~1 stick)
- 2 cups 2% milk
- ½ cup semi-sweet chocolate chips
Prepare the cream cheese filling. Place the cream cheese and brown sugar into a small bowl. Using a hand mixer, mix until well combined. Transfer into a piping bag. Set aside.
Make the pancake batter. Add the flour, sugar, salt, and baking powder to a medium bowl and mix to combine.
In a separate bowl, add the eggs, butter, and milk and whisk until everything is thoroughly combined.
Slowly add the dry ingredients to the wet and mix to combine.
Heat a nonstick pan or skillet over medium heat. Spray with nonstick cooking spray. When the pan is hot, scoop ¼ cup of batter into the pan. Pipe 1-2 tablespoons of the cream cheese into a swirl in the center of each pancake. Scoop another ¼ cup of batter and cover the cream cheese mixture. Sprinkle on a handful of chocolate chips. Cook for 2-3 minutes on each side, flipping when the bubbles start to form.
Repeat until the batter is gone.
Top with your favorite pancake toppings and serve immediately.
- You can sub almond milk for 2%.
