Broccoli Cheese Casserole

- 1/4 cup unsalted butter
- ½ medium yellow onion diced
- 1 10 oz. jar Cheez Whiz
- 8 oz. cream cheese softened
- 1 cup chicken broth
- 2 10 oz. bags frozen broccoli
- 1.5 cups white minute rice
- 2 teaspoons salt
- 4 oz. shredded cheddar cheese ~1 cup
Preheat the oven to 350℉. Spray a 9x13-inch casserole dish and set aside.
Heat a large skillet over medium/high heat. Add the butter. When the butter has melted, add the onion to the skillet. Sautee for 2-3 minutes or until the onions have become soft and translucent. Remove from heat and set aside.
Add the cheez whiz, cream cheese, and broth to a large bowl. Using a hand mixer, mix until a smooth sauce is formed.
Add the onion and butter, frozen broccoli, and rice to the bowl and mix until everything is well coated. Transfer the broccoli rice mixture to the casserole dish.
Bake for 30 minutes. Then add the cheddar cheese to the top. Bake for another 30 minutes.
Allow 10 minutes of rest time before serving.
