Vodka Sauce
Vodka sauce is a delicious creamy tomato based sauce made wtih onions, garlic, parmesan cheese, heavy cream, and a splash of vodka. Serve it on top of your favorite cooked noodle!

- 2 tablespoons olive oil
- ½ small yellow onion minced
- 3 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon crushed red pepper optional
- 3 tablespoons tomato paste
- ¼ cup vodka
- ¾ cup heavy cream
- 1 tablespoon unsalted butter
- â…“ cup grated parmesan
- 8 oz. cooked noodles
Heat a large skillet over medium/high heat. Add the olive oil. When the oil is fragrant, add the yellow onion and garlic to the pan and sprinkle with ½ teaspoon of salt. Sauté for 2 to 3 minutes.
Next, whisk in the tomato paste and crushed red pepper. Allow to cook for 1 to 2 minutes. Add the vodka and allow to cook for 4 to 5 minutes. Stirring occasionally.
Reduce the heat and whisk in the heavy cream and butter.
Turn the heat off and whisk in the parmesan.
Serve the vodka sauce with your favorite pasta.
