Sloppy Joe Casserole with Tater Tots

- 1.5 lbs. 85% ground beef
- ½ medium yellow onion diced
- ½ medium green bell pepper diced
- 1 teaspoon salt
- 15 oz. canned tomato sauce
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
- 1 teaspoon Worcestershire sauce
- 8 oz. shredded cheddar cheese ~2 cups
- 4 cups tater tots ~15 oz.
Preheat the oven to 350ºF.
Heat a medium oven-safe skillet over medium heat. Add the ground beef and cook until mostly browned. Add the onion and green pepper and cook for another 3–4 minutes, until the vegetables have softened and no pink remains in the beef. The finished beef mixture should reach 160ºF.
Add the salt, tomato sauce, mustard, brown sugar, and Worcestershire sauce to the skillet and stir to combine. Cook for 1 minute.
Top with the cheddar, then arrange the tater tots over the cheese so the filling is completely covered. Bake uncovered for 25 minutes, until the tots are golden and crisp. For extra crispness, broil briefly at the end and watch continuously.
Remove from the oven and let rest for 5 minutes before serving.
- Premade sloppy joe sauce is an optional shortcut idea and may change the flavor and consistency.
- Ground chicken, ground turkey, veggie crumbles, lentils, extra vegetables, and alternate cheeses are ideas rather than tested variations.
- If the skillet cannot comfortably hold the filling, transfer it to a casserole dish before adding the cheese and tater tots.
