English Pea Salad
This easy english pea salad is filled with all the classic ingredients, and tossed with a creamy dressing! Hard boiled eggs, cheddar cheese cubes, bacon, red onion, and, of course, peas.

- 10 oz. frozen peas thawed
- ¼ red onion minced
- 4 oz. sharp cheddar cheese diced
- 6 slices cooked bacon crumbled
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 hard-boiled eggs chopped
Place the peas, red onion, cheddar, and bacon into a bowl. Mix and set aside.
Add the mayonnaise, mustard, lemon juice, dill, parsley, salt, and pepper to a bowl. Mix until combined.
Transfer the dressing to the salad and mix until evenly coated. Fold in the chopped eggs.
This can be served immediately, but the longer it sits the more the flavors will develop.
