English Pea Salad

This easy english pea salad is filled with all the classic ingredients, and tossed with a creamy dressing! Hard boiled eggs, cheddar cheese cubes, bacon, red onion, and, of course, peas.

Ingredients

  • 10 oz. frozen peas thawed
  • ¼ red onion minced
  • 4 oz. sharp cheddar cheese diced
  • 6 slices cooked bacon crumbled
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 hard-boiled eggs chopped

Instructions

  • Place the peas, red onion, cheddar, and bacon into a bowl. Mix and set aside.

  • Add the mayonnaise, mustard, lemon juice, dill, parsley, salt, and pepper to a bowl. Mix until combined.

  • Transfer the dressing to the salad and mix until evenly coated. Fold in the chopped eggs.

  • This can be served immediately, but the longer it sits the more the flavors will develop.
