Deconstructed Enchiladas
No rolling here: accordion-folded flour tortillas bake with cottage cheese-enchilada sauce, pinto beans, corn, and a melty cheese topping for a scoopable dinner.

- 6 medium flour tortillas
- 2 cups enchilada sauce divided
- 1 cup cottage cheese
- 15 oz. canned pinto beans drained and rinsed
- 1 cup frozen corn
- ¼ cup frozen diced onion
- ½ cup Mexican-style shredded cheese
Preheat the oven to 400ºF. Coat an 8 x 8-inch baking dish with nonstick cooking spray.
Carefully fold the tortillas accordion-style and arrange them in the prepared baking dish so the folds face upward.
In a mixing bowl, stir together 1 cup of the enchilada sauce and the cottage cheese. Pour the mixture over the tortillas, then use a fork or spoon to gently open the folds so the sauce settles between them.
Top the sauced tortillas with the drained pinto beans, frozen corn, and frozen diced onion. Pour the remaining 1 cup of enchilada sauce over the top and finish with the shredded cheese.
Bake for 30 minutes, or until the sauce and cheese are bubbling. Remove the dish from the oven and let it cool for 5–10 minutes before scooping and serving.
- Black beans are a good substitute for pinto beans.
- If frozen diced onion is unavailable, use 2 tablespoons minced fresh onion; the flavor will be slightly different.
