  • 1 cup frozen peas
  • 1 tablespoon olive oil
  • 1/2 yellow onion minced
  • 1 pint cherry tomatoes
  • 3 cloves garlic minced
  • 1/2 cup cottage cheese
  • 1/2 cup Parmesan cheese divided
  • 1 tablespoon crushed red pepper flakes
  • 2 tablespoons torn basil leaves

  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.
  • Add the cherry tomatoes and garlic to the skillet. Cook over medium heat, stirring occasionally, until the tomatoes soften and burst and the garlic is golden, about 8–10 minutes. Reduce the heat if the garlic begins to brown too quickly.

Notes

  • Any tube-shaped or chunky pasta will work in this recipe.
  • The peas can be cooked separately, but adding them during the final minute of the pasta cook time saves a dish.
  • This recipe is intentionally spicy. Crushed red pepper brands vary, so adjust to your heat preference if needed.
  • Blend the sauce until no cottage cheese curds remain for the smoothest texture.
