Cheez-It Breaded Chicken Fingers

- 1.5 lbs. boneless skinless chicken breast
- 2 large eggs
- 3 cups Cheez-It crackers
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon ground black pepper
- 1 teaspoon kosher salt
- 1-2 tablespoons olive oil
Cut the chicken breast into ½-inch thick strips. Set aside.
Place the Cheez-It crackers into a food processor and pulse until they are roughly the size of panko bread crumbs. Transfer them to a large plate. Add the garlic powder, paprika, pepper, and salt to the cheez-its and mix using a fork.
Crack 2 large eggs into a medium size bowl and whisk.
Next, dip each chicken strip into the whisked egg and then dredge them in the Cheez-It crumbs. Set them on a plate.
Spray the air fryer with cooking spray before placing the chicken strips in the basket. Drizzle ½ tablespoon of olive oil over the strips.
Air fry at 400℉ for 4 minutes. Flip the chicken strips, drizzle with another ½ tablespoon of olive oil, and air fry for another 4 minutes.
Serve immediately.
- Oven instructions: heavily spray a baking sheet with cooking spray. Preheat oven to 350℉, drizzle ½ tablespoon olive oil over the top bake for 8 minutes. Flip, drizzle with another ½ tablespoon of olive oil, and bake for an additional 7 minutes.
- Spice the recipe up by adding 1 teaspoon of cayenne pepper to the cheez-it mixture.
