Cheese Omelette
This easy cheese omelette uses eggs, butter, cheddar, and salt plus a simple curd-forming technique for a quick, cheesy breakfast.

- 2 large eggs
- Pinch of salt
- 1 tablespoon butter separated
- 2 tablespoons cheddar cheese
Optional Garnish
- 1 teaspoon chives minced
- 1 tablespoon shredded cheddar cheese
Crack the eggs into a medium bowl and whisk until combined.
Add a pinch of salt and whisk again. Set aside.
Heat an 8-inch nonstick skillet over medium heat. Add ½ tablespoon of the butter.
When the butter has melted, spread it evenly across the skillet. Pour in the eggs.
Do not stir the eggs. Let a curd form for 10–15 seconds. Use a spatula to carefully lift the edge and push the large curds toward the center, allowing uncooked egg to flow into the open space and contact the skillet.
Sprinkle the cheddar over the omelette.
When the eggs are mostly cooked and the cheese is melted, use a spatula to fold half of the omelette over itself. Cook for another 30 seconds.
Add the remaining butter to the skillet and run it along the folded edge of the omelette.
Carefully shake the skillet to loosen the omelette, then tip the skillet and slide the omelette onto a plate.
Top with the optional garnishes and serve.
