Place the cream cheese, butter, 4 cups of powdered sugar, peppermint exgtract, and food coloring into a large bowl.

Mix
We recommend starting with 1 drop of food coloring and going up from there. Using a hand mixer, mix together until it has the consistency of wet sand.

Scoop
Use your hands to firmly press the mixture together forming a solid ball. Using a teaspoon, scoop out each mint. Roll each ball into the remaining powdered sugar.

Press
Place balls on a parchment-lined baking sheet. Use a fork to press into each mint. Store in an airtight container with parchment paper separating layers.
