  • 8 oz. round brie
  • 2 tablespoons olive oil
  • 2 cups fresh cherries pitted and halved
  • 3 tablespoons balsamic vinegar
  • ¼ cup fresh basil torn
  • ½ teaspoon fresh cracked pepper

  • Preheat the grill to 450℉.
  • Drizzle olive oil onto both sides of the brie and place it into an 8x8-inch tin foil pan.
  • Next, sprinkle the cherries around the brie in the pan and place the pan on the grill over direct heat.
  • Grill with the lid off for 5 minutes. Then, flip the brie and place the lid on the grill. Grill over direct heat for another 5 minutes.
  • Remove the pan from the grill. Cut an X into the brie and gently fold back the triangles of rind on top. Drizzle on the vinegar and top with cracked pepper and torn basil.
  • Serve with crusty breads or crackers.

Tips & Notes

  • This recipe uses a young brie wheel and that part is essential. A younger brie will typically be more firm. It is also important to use a whole uncut brie wheel. Local or imported bries that are cut or ripened to be served as is, would turn into liquid.
  • If needed, firm strawberries would be a good alternative to cherries.
