Snow Ball Cookies

These snowball cookies are a more delectable take on the classic Christmas cookie, using cream cheese to make them ultra rich and creamy!

Ingredients

  • 2.25 cups all-purpose flour
  • 1 cup chopped pecans ~4oz.
  • ½ teaspoon salt
  • ½ cup unsalted butter softened (~1 stick)
  • 4 oz. cream cheese softened
  • 1 cup powdered sugar divided
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350℉.
  • Place the flour, pecans, and salt into a large bowl and mix. Set aside.
  • Add the butter, cream cheese, ½ cup powdered sugar, and vanilla in a separate bowl. Cream together until light and fluffy.
  • Add the flour mixture to the butter cream cheese and blend until combined.
  • Using a 1.5-tablespoon cookie scoop, scoop out the dough and place it on the cookie sheet.
  • Bake for 11 minutes or until the bottoms are golden brown.
  • Allow the cookies to cool for 5 minutes, then roll them in the remaining powdered sugar. Then set it on a cooling rack to cool. Store in an airtight container.

Tips & Notes

  • Use parchment paper in between cookies when storing in a container.
  • Switch up the flavors by using walnuts instead of pecans. Or almond extract in place of vanilla.
