Bacon Egg and Cheese

Make breakfast easy and delicious with a batch of these copycat bacon, egg and cheese sandwiches. They're better than McDonalds!

  • 12 large eggs
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 16 slices bacon ~24 oz., medium/thick-cut
  • 8 slices American cheese

Instructions

  • Preheat the oven to 450℉.
  • To prepare the biscuits, add the flour, sugar, salt, baking powder, and baking soda to a large bowl. Whisk together. Add in the grated butter. Using your hands break the butter up into the flour.

  • Next, add the milk. Using your hands, gently bring them together until the dough begins to hold together. Transfer the dough onto a work surface and fold it together until everything is combined and a ball has formed.
  • Roll the dough into a square fold it over and roll again, do this 3-4 times. For the final rollout, roll until it is about 12x9 inches and ½ inch thick. Cut the dough into 8 biscuits -- about 3x3 inches. Place them onto a baking sheet and set them into the freezer for 10 minutes.

  • After the 10 minutes, bake for 10-15 minutes. Set aside.
  • Reduce the heat of the oven to 400℉.
  • Prepare the bacon by lining a baking sheet with a baking rack. Place bacon on the rack and cook to the desired doneness -- 10-20 minutes.Check out this bacon in the oven method for more details

  • Whisk together the eggs, salt, and pepper. Spray a 9x13-inch baking sheet with cooking spray. Transfer the eggs to the baking sheet and bake at the same time as the bacon for 10-12 minutes.

  • When the eggs are done baking, cut them into 8 squares.
  • To assemble the sandwiches, cut open the biscuits and layer 1 slice of egg, 1 slice of cheese, and 2 slices of bacon.

  • Serve immediately. Or wrap individually and save for later.

Tips & Notes

  • Store-bought biscuits are a great time saver and substitute.
  • The eggs and bacon can be cooked on the stovetop.
