Cream Cheese Blackberry Cobbler

This cream cheese blackberry cobbler is so decadent and delicious! Fresh blackberries baked in cake batter and cubes of cream cheese -- yum.

Ingredients

  • 8 tablespoons unsalted butter ~1 stick
  • ¾ cup all-purpose flour
  • ½ cup + 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup whole milk
  • 8 oz. cream cheese cubed
  • 3 cups blackberries

Instructions

  • Spray an 8x11-inch baking dish with cooking spray, and then add the stick of butter. Then, transfer it into the oven to melt while it’s preheating. Preheat the oven to 350℉.
  • Place the flour, ½ cup sugar, baking powder, and salt into a bowl. Whisk together.
  • Add the milk and whisk to combine. It should be the same consistency as a pancake batter.
  • In a separate bowl, add the blackberries and 1 tablespoon of sugar.
  • Remove the baking dish from the oven and transfer the batter into it. Scatter the cream cheese cubes into the dish. Transfer the berries to the baking dish and scatter them over the top of the batter and cream cheese.
  • Bake for 60 minutes.
  • Serve as is or with whipped cream or ice cream.

Tips & Notes

  • Fresh or frozen berries work in this recipe.
