Yield 6
- 8 oz. cream cheese softened
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 refrigerated pie crust
- 2 tablespoons strawberry jam
- 2 cups sliced strawberries
- 1 large egg whisked
- 1 teaspoon granulated sugar
Add the cream cheese, powdered sugar, and vanilla extract to a bowl. Using a hand-held mixer, mix until combined. Set aside.
Roll the pie crust out onto a baking sheet so that it is laying completely flat. Spread the cream cheese on to the pie crust leaving a 2-inch border. Next, spread the jam on top of the cream cheese and then pile the strawberries on top of the jam.
Encase the strawberries in the crust by gently picking up the edges of the tart and folding the crust in on top of the strawberries.
Use a pastry brush to paint the whisked egg onto the outside of the crust and sprinkle the granulated sugar on top of the crust and berries.
Bake for 20 minutes, the crust should be golden brown. Allow the crust to cool for at least 20 minutes before serving.
- We used 1 Pillsbury pie crust.
- You could use any berry and jam mix in this recipe.
