Cottage Cheese with Fruit Breakfast Bowls

Start the most important meal of the day off right with these cottage cheese with fruit breakfast bowls. They're easy to make and so delicious.

Ingredients

  • ½ tablespoon lime zest ~1 small lime
  • 3 tablespoons fresh lime juice ~½ lime
  • 3 tablespoons honey
  • 6 mint leaves thinly sliced
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 1 lb. cottage cheese ~2 cups

Instructions

  • Place the lime zest, juice, and honey into a bowl and whisk together. Add the mint leaves, blueberries, and strawberries and mix to coat with the dressing. Set aside.

  • To serve, place ½ cup of cottage cheese into a bowl and top with ½ cup of the fresh berry mixture.

Tips & Notes

  • We used strawberries and blueberries in this recipe, but many fruits can be used. Likewise, lime can be substituted with lemons or oranges.
  • Whip the cottage cheese in a food processor to make a smoother base.
  • These bowls can be made ahead of time. There will be some juices from the cut fruit that sits on top. That can serve as a sauce or can be mixed in before eating. Made ahead can last 3-4 days, or as long as the cut fruit still looks good.
