Cheesy Rice

Cheesy rice is the perfect addition to any meal. This cheesy rice is made with parmesan cheese, garlic, and seasonings.

Ingredients

  • 1 tablespoon olive oil
  • ¼ yellow onion minced
  • 1 garlic clove minced
  • 1 teaspoon kosher salt
  • 1 cup white rice
  • 2 cups chicken broth
  • 2 oz. shredded parmesan cheese ~½ cup

Instructions

  • Heat olive oil in a stockpot over medium/high heat. When the oil has becomes fragrant add the onion and garlic and cook for 1-2 minutes. Add the rice and salt to the pot and cook it for another minute. This will toast the rice.

  • Add the broth to the rice and stir. Cover with a lid and reduce heat to simmer. Cook for 20 minutes, or until all of the broth has been absorbed. Remove the pot from the heat and add the parmesan cheese. Stir until melted into the rice.

Tips & Notes

  • We made this white and brown rice. The brown rice takes almost double the time.
  • We used parmesan cheese, but any cheese could be substituted. Asiago or romano would be comparable. Other cheeses like cheddar or mozzarella would also be good but would change the consistency slightly.
