Broccoli Cheese Casserole

This broccoli cheese casserole is a perfect weeknight meal! It's made with just 8 ingredients, and is ready to serve in an hour.

Ingredients

  • 1/4 cup unsalted butter
  • ½ medium yellow onion diced
  • 1 10 oz. jar Cheez Whiz
  • 8 oz. cream cheese softened
  • 1 cup chicken broth
  • 2 10 oz. bags frozen broccoli
  • 1.5 cups white minute rice
  • 2 teaspoons salt
  • 4 oz. shredded cheddar cheese ~1 cup

Instructions

  • Preheat the oven to 350℉. Spray a 9x13-inch casserole dish and set aside.
  • Heat a large skillet over medium/high heat. Add the butter. When the butter has melted, add the onion to the skillet. Sautee for 2-3 minutes or until the onions have become soft and translucent. Remove from heat and set aside.

  • Add the cheez whiz, cream cheese, and broth to a large bowl. Using a hand mixer, mix until a smooth sauce is formed.

  • Add the onion and butter, frozen broccoli, and rice to the bowl and mix until everything is well coated. Transfer the broccoli rice mixture to the casserole dish.

  • Bake for 30 minutes. Then add the cheddar cheese to the top. Bake for another 30 minutes.

  • Allow 10 minutes of rest time before serving.
