- 1 tablespoon avocado oil
- ½ medium yellow onion diced
- 1 large red bell pepper diced
- 1 lb. 85% ground beef
- 15 oz. can pinto beans drained and rinsed
- 1 tablespoon taco seasoning
- 15 oz. can tomato sauce
- 4 oz. shredded cheddar cheese ~1 cup
- 4 oz. shredded pepper jack cheese ~1 cup
- 4 cups frito chips
Optional Toppings
- Sour cream
- Salsa
- Sliced avocado
- Guacamole
Preheat the oven to 350℉.
Heat avocado oil over medium/high heat in a large oven safe skillet.
When the oil is fragrant add the onions and peppers and sauté for 2-3 minutes. Add the ground beef and cook for an additional 5-7 minutes.
Once the beef is fully cooked, add the pinto beans, taco seasoning, and tomato sauce and cook for a few minutes.
Next, sprinkle the cheddar and pepper jack cheese on top of the beef mixture.
Pour the Fritos on top of the cheese so that it is completely covered.
Place the skillet in the oven and bake for 20 minutes.
Serve with your favorite taco toppings.
