Cheesy Frito Taco Skillet

This Cheesy Frito Taco Skillet is a walking taco but served in a skillet. It's a fun appetizer or easy dinner idea!

Ingredients

  • 1 tablespoon avocado oil
  • ½ medium yellow onion diced
  • 1 large red bell pepper diced
  • 1 lb. 85% ground beef
  • 15 oz. can pinto beans drained and rinsed
  • 1 tablespoon taco seasoning
  • 15 oz. can tomato sauce
  • 4 oz. shredded cheddar cheese ~1 cup
  • 4 oz. shredded pepper jack cheese ~1 cup
  • 4 cups frito chips

Optional Toppings

  • Sour cream
  • Salsa
  • Sliced avocado
  • Guacamole

Instructions

  • Preheat the oven to 350℉.
  • Heat avocado oil over medium/high heat in a large oven safe skillet.
  • When the oil is fragrant add the onions and peppers and sauté for 2-3 minutes. Add the ground beef and cook for an additional 5-7 minutes.

  • Once the beef is fully cooked, add the pinto beans, taco seasoning, and tomato sauce and cook for a few minutes.

  • Next, sprinkle the cheddar and pepper jack cheese on top of the beef mixture.

  • Pour the Fritos on top of the cheese so that it is completely covered.

  • Place the skillet in the oven and bake for 20 minutes.

  • Serve with your favorite taco toppings.
