Vodka Sauce

Vodka sauce is a delicious creamy tomato based sauce made wtih onions, garlic, parmesan cheese, heavy cream, and a splash of vodka. Serve it on top of your favorite cooked noodle!

Ingredients

  • 2 tablespoons olive oil
  • ½ small yellow onion minced
  • 3 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper optional
  • 3 tablespoons tomato paste
  • ¼ cup vodka
  • ¾ cup heavy cream
  • 1 tablespoon unsalted butter
  • cup grated parmesan
  • 8 oz. cooked noodles

Instructions

  • Heat a large skillet over medium/high heat. Add the olive oil. When the oil is fragrant, add the yellow onion and garlic to the pan and sprinkle with ½ teaspoon of salt. Sauté for 2 to 3 minutes.

  • Next, whisk in the tomato paste and crushed red pepper. Allow to cook for 1 to 2 minutes. Add the vodka and allow to cook for 4 to 5 minutes. Stirring occasionally.

  • Reduce the heat and whisk in the heavy cream and butter.
  • Turn the heat off and whisk in the parmesan.

  • Serve the vodka sauce with your favorite pasta.
