First, microwave the bacon. Line a large, microwave-safe plate with 3 pieces of paper towel. Then, place the bacon on the plate.
Microwave on high for 3 minutes. Carefully flip bacon over and continue microwaving for an additional 3 minutes.
After 6 minutes continue microwaving in increments of 30-60 seconds until your bacon reaches its desired doneness. Set the bacon aside.
Next, make the cream cheese spread. Add the cream cheese, minced jalapño, garlic powder, and kosher salt to a bowl and blend using a hand mixer until all ingredients are evenly distributed. Set aside.
Spread 1 tablespoon of butter on each slice of bread.
Next, spread ¼ cup of the jalapeño cream cheese onto the unbuttered side of 1 slice of each sandwich. Layer two slices of cheese and 2 strips of bacon on top of the cream cheese.
Heat a large skillet over medium/high heat. Place the sandwiches in the skillet and cook for 4-5 minutes. Flip and cook for another 4-5 minutes or until golden brown.
Serve immediately.
