Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Add the flour to a shallow bowl. In another bowl, whisk together the eggs and milk until smooth. In a third bowl, mix together the plain bread crumbs, panko bread crumbs, garlic powder, Italian seasoning, and kosher salt.
Dip each mozzarella stick into the flour, followed by the egg, and then the breadcrumbs. Then, dip it back into the egg and back into the breadcrumbs again. Double breading helps prevent the mozzarella sticks from leaking in the oven-- don’t skip it!
Once all of the sticks have been breaded, spray them lightly with olive oil spray and bake for 8-10 minutes, or until the sticks are light brown and crisp around the edge.
Serve the mozzarella sticks warm with a side of marinara sauce. Enjoy immediately.
