Wisconsin  Cheese Soup

Why you'll love it

A classic midwestern cheese soup recipe, and it’s made completely on the stovetop.

What you need:

carrots celery stalk yellow onion paprika dried mustard unsalted butter all-purpose flour chicken broth 2% milk Coors Light beer Wisconsin cheddar

Cook

Heat olive oil in a large pot. Add carrots, celery, and onion. Cook for 5 mins, stirring occasionally. Add garlic & seasonings. Cook for another 1-2 minutes.

Add

Add the butter and flour to create a paste on top of the veggies. Stir continuously for 1-2 minutes to make sure all of the flour has had a chance to cook.

Whisk

Whisk in broth, milk, & beer. Be sure to scrape the bottom and sides of pan. Bring to a boil and reduce heat to low. Simmer for 20 minutes.

Serve

Use an immersion blender to break up the vegetables. Add the cheddar cheese and cook for another 5 minutes. Serve!
