Worcestershire sauce

Season
Pound flank steak until 3/4 inch thick. Slice into thin strips & place in a bowl. Season and set aside. Add cilantro, onion, lime juice & vinegar to a bowl.

Heat
Heat oil in a large skillet. Add mushrooms & cook. Remove. Add remaining oil and cook beef to your liking. Remove meat & add to mushrooms. Add onions.

Cook
Clean skillet. Add oil & then add tortilla, cheese, beef and more cheese. Fold tortilla over & press down. Cook until golden brown.

Serve
Repeat step 8 until all of the quesadillas are made. Serve with a squeeze of fresh lime juice, the steak drippings as a dip or with salsa and guacamole.
