Spinach Artichoke Mushrooms

These are the perfect combo of spinach artichoke dip & stuffed mushrooms.

What you need:

portobello mushrooms  olive oil coarse salt ground black pepper yellow onion garlic canned artichoke fresh spinach  cream cheese  mozzarella cheese

Bake

Preheat oven to 400ºF. Drizzle olive oil, salt & pepper onto mushrooms. Bake for 12-15 minutes until tender. Remove from oven and let rest.

Sauté

Sauté onion and garlic in a large skillet. Add artichoke, salt & pepper. Sauté. Turn heat to medium, add spinach & allow to wilt. Add cream cheese.

Broil

Add a mound of the spinach artichoke mixture to well of mushrooms. Turn the heat on the oven to broil.

Serve

Sprinkle mozzarella cheese on top and place the mushrooms back into the oven for 2-3 minutes. Remove from oven & enjoy!
