russet potatoes

unsalted butter
white onion
garlic
all-purpose flour
chicken broth
cheese curds

Cut
Cut the potatoes into sticks. Soak them in ice water for 15 min. Heat oil & fry potatoes for 3-5 min. Remove and drain them on a cooling rack.

Saute
Increase heat to 375℉. Fry another 1-2 min. Remove from heat and toss them with salt. Saute butter & onions. Add garlic & salt. Cook another minute.

Whisk
Whisk in flour and cook for at least 1 min. Add chicken broth and whisk vigorously, making sure to scrape along the sides. The gravy should thicken immediately.

Serve
Place french fries in a casserole dish. Layer gravy on top. Cover with cheese curds. Place under the broiler for 2-3 min. Serve!
