Pumpkin Gnocchi

Why you'll love it

Made with just a few ingredients — ricotta cheese, pumpkin puree, eggs, parmesan, and flour.

What you need:

eggs pumpkin puree ricotta cheese grated parmesan cheese  ground nutmeg kosher salt & pepper all-purpose flour unsalted butter minced garlic

Shape

Add gnocchi ingredients to a large bowl & mix. Fold in flour with wooden spoon. Shape dough into log & cut into 6 strips, each rolled a foot long.

Cut

Cut the ropes into 1-inch pieces and place on floured baking sheet. Boil for 3-4 minutes in salted water. Heat butter for 2-3 minutes.

Add

Add the sage leaves and minced garlic to the pan, stirring often. The butter should become golden. Leaves should wilt and become slightly crispy.

Serve

Add the gnocchi to the butter sauce and toss to cover. Serve with the remaining grated parmesan cheese.
