Gnocchi w/ Sweet Pea Butter Sauce

What you need:

Unsalted butter Vegetable stock Frozen sweet peas Kosher salt Freshly ground pepper Fresh lemon juice Truffle Pecorino cheese

Butter Sauce

Heat a large sauté pan over medium/high heat. Then, melt the butter and add the broth and frozen peas.

Blend

Blend 2/3 of the sweet pea mixture in a blender or food processor. Return to the pan and season with salt, pepper & lemon juice.

Combine

Bring to a simmer & add the freshly cooked, drained gnocchi to the pan, tossing gently until the sauce has thickened, & the gnocchi are coated.

Serve

Top with truffle Pecorino cheese, serve and enjoy!
