Prepare
Prepare graham cracker crust according to recipe. While the crust is cooling, prepare the filling. Whip ricotta & cream cheese in a stand mixer.

Transfer
Add sugar, salt, eggs, and vanilla bean. Cream until well combined. Transfer filling to the crust and spread so the top is even.

Bake
Put on a baking sheet. Pour 1 inch of hot water in bottom. Bake for 1.5 hours at 325℉. Then turn oven off. Crack the oven door & allow to sit for 30 minutes.

Serve
Remove from the oven and refrigerate for at least 5 hours. Overnight is even better. Serve with raspberries & powdered sugar.
