Smashed Carrots

Why you'll love it

These parmesan smashed carrots are a deliciously savory appetizer or side.

What you need:

carrots olive oil kosher salt dried thyme ground black pepper crushed red pepper grated parmesan cheese mayonnaise lemon juice garlic cloves

Cut Carrots

Cut the carrots into ½ inch chunks, and set aside. Preheat the oven to 425℉ and prepare a baking sheet with parchment paper.

Smash Carrots

Add carrots to boiling water. Cook for 10 min. Drain and place on baking sheet. Using the bottom of a mason jar, smash the carrots to flatten them.

Bake

Drizzle with olive oil and season with seasonings and parmesan cheese. Bake for 30 min. While the carrots are baking prepare the aioli.

Serve

Add all of the ingredients to a small bowl and mix until combined. Refrigerate until ready to serve. Serve the carrots either hot or cold with the aioli.
